Uses Large quantities of onion are exported from Gujarat in the form of raw onion nd value added dehydrated onion for which a number of units exist in the state
Opportunity for value addition Required for improvement of varieties suitable for processing (higher solid content),better storage facilities, modern energy efficient dehydration units, and irradiation center for preventing spoilage. There is potential for making high value added products like micro-encapsulated onion power.
